“What about when life gives you bananas?”

When life gives you lemons you make lemonade. This saying means that when you have a bad situation in life you should try to make the best you can from it. But what about when life gives you bananas? If you’ve never seen a banana tree with a bunch of bananas hanging from it you will be surprised at how many of the fruit come from just one bunch. I like to think of bananas representing a good situation in life where if life gives you bananas you should enjoy them to their fullest even up to the end when they become brown and spotted.img_48421

Today’s recipe is a use for those spotted old bananas! Banana bread! I found this recipe online and tweaked it a bit to fit what I like. (As any home cook should do when they find a new recipe)

 

Taking two or three of your very ripe bananas throw them into a bowl with 1/3 cup of butter (preferably melted but mine was room temp soft). Mix them well until bananas are well mashed.

Next Add in 1 teaspoon of baking soda, this is going to make your bread light and springy. Also throw in a pinch of salt, a dash of cinnamon, and 3/4 a cup of sugar. The original recipe said to put a whole cup but I don’t think I need that much. Lastly crack in one egg (I had a turkey egg so why not) and add a splash of vanilla.

Here is where I got a little fancy and decided to sift my 1 1/4 cup of flour into the mixture. By sifting the flour it makes sure that your batter won’t have any lumps and will blend better. Next grab your bread pans and spray them with some cooking oil before filling them with your mixture.

Bake these at 350 degrees for 50-60 minutes or until the bread has cooked thru. Use a toothpick to check that the center is not doughy.

Banana Bread

You will need:

*preheat oven to 350 F*

  • 2-3 Very ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • Dash of cinnamon
  • 3/4 of sugar
  • 1 egg
  • splash of vanilla
  • 1 1/4 cup of flour
  • Cooking Spray
  • Bread Pans
  1. Mash bananas and then mix in baking soda, salt, and cinnamon.
  2. Add sugar egg and vanilla and mix well.
  3. Sift in Flour and blend well.
  4. Spray bread pans with cooking spray and then add batter (half way full).
  5. Bake at 350 degrees F. for about 50-60 minutes or until toothpick can be inserted in middle and come out clean.
